My husband and Father-In-Law couldn't stop talking about how yummy the Weekend Brunch Casserole was! It was super easy to make and very satisfying! I will definitely make it again soon. Next time I might change it up and add some onions, red and green peppers and maybe use both mozzerella and cheddar cheeses.
Excellent & filling brunch casserole!

TRY THIS VARIATION

My family loves this casserole. We substitute Bob Evans Zesty Hot Sausage and sharp cheddar cheese. It's very flavorful, without being too spicy.

I made this for a Christmas brunch used turkey sausage since one of my coworkers does not eat pork. Added onions and mushrooms. Will make again but may use a mix of cheeses just to change it up. Is extremely easy and very very good!!!!
A very good casserole
Judy, from Milford, IL
Very good, I made for Christmas breakfast in style of breakfast pizza.
really, really, love this casserole!!!
Liz, from Orion, MI
Although it is labeled "Brunch", it serves nicely as Supper, too. I generally use the Bob Evans Sage sausage roll. It smells great while baking and is so easy to put together, even on a busy day. Oh yes, you can extend the servings by using 5 or 6 eggs. (Make sure the eggs are seasoned well before pouring over the sausage.)
Simply the BEST!!
Marty, from Pleasantville, NJ
Soooo good and sooo easy! Thanks to daughter-in-law Cathy for finding it, and then including it in our family Christmas brunch. It's already on of our favorites.
Super-Star Weekend Brunch Casserole
Jean, from Rockville, MD
I love this casserole on many levels. It is 'simplicity' in itself. The list of ingredients is short and not exotic or too spicy. It is another unique way to employ Crescent Dough. Bob Evans Sausage give such a good flavor to a casserole without adding a highly greasy side-effect. There are 8 full-sized portions &/or 16+ for 'samplers'. Would be fantastic to serve as a mini-kiddies breakfast treat, or sleepover snack. Will give a fresh fruit salad a great highlight as an accompaniment. This goes into my 'Favorites' Recipe Box!
I LOVE this recipe!!!
M, from Maple Heights, OH
This is so easy to make. I am gonna add bacon and see how it turns out!!

Tasty Weekend Brunch Casserole
Moniqueca, from Odenton, MD
I saw this recipe earlier today and decided to make it for dinner. After reading the reviews, I added sauteed onions and green peppers to the dish. An easy meal to make just like the recipe said although my casserole took about 35-40 minutes to set (I used 8 eggs). This is delicious!!

Crowd pleaser !
jann, from williamsburg, MI
This is a guaranteed crowd pleaser!! I make it ALL of the time and people always ask for more. My daughter had a slumber party and all eight girls loved it for breakfast. Make sure that the middle is set before taking out of oven. The maple sausage is the secret sweet ingredient.
dot, from Fort Myers, FL
Good company brunch..I doubled amount of eggs. Serves more but I like it better
Weekend Brunch Casserole is not just for weekends!
LarryBoy, from Farmington Hills, MI
I made this on a Friday morning for work. My co-workers really liked it and I gave them all the recipe. I did subsitute a cheddar cheese blend for the mozzarella, for me that is cheese more suited for pizza. :>) This was very easy to make...enjoy! LarryBoy
