A quick and filling breakfast you can even prepare in the microwave.
Ingredients
- 1/2 pound Bob Evans Original Sausage Roll
- 1/2 package Bob Evans Home Fries Diced Potatoes (20oz)
- 3 tablespoons bell pepper, chopped
- 3 tablespoons onion, chopped
- 2 tablespoons milk
- 6 large eggs
Directions
Crumble sausage into frying pan. Add potatoes, pepper and onion. Cook slowly until sausage is browned. Beat eggs and combine with milk. Add to sausage mixture and cook, stirring occasionally to fluff eggs, until eggs have thickened. Refrigerate leftovers.
Optional Microwave Directions:
In 2-quart glass casserole pan, crumbled sausage on high for two minutes. Stir to break-up sausage. Stir in potatoes, peppers and onions. Microwave two minutes on high. Beat eggs and combine with milk. Add to sausage mixture. Microwave 3-4 minutes on high, stirring after each minute until eggs are set.

Great breakfast to serve when camping!

We had this breakfast on our most recent camping trip. Easy to prepare over a campfire and very tasty. Everyone enjoyed the meal. Served the Down-Home Breakfast Special with toast and coffee and that was all we needed. One pan prep and cleanup. Easily fed four hungry adults -- with leftovers. Which, warmed up nicely later in the week. This will become a "regular" on our camping menu.
