Easy Italian Sausage Lasagna

This classic dish is a meal on its own, made special with Bob Evans Italian roll sausage
Ingredients
- 1 pound Bob Evans Italian Roll Sausage
- 1 jar pasta sauce (26 oz)
- 1 can tomato sauce (15 oz)
- 1 package oven ready lasagna noodles (8 oz)
- 1 container ricotta cheese (15 oz)
- 1 teaspoon Italian seasoning
- 4 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Directions
In a skillet, crumble and cook sausage over medium heat until brown. Remove from heat and stir in pasta sauce and tomato sauce. In small bowl, combine ricotta cheese and Italian seasoning. Preheat oven to 375F. Spread 1 cup sauce into bottom of a 9 x 13 inch baking dish. Top with 3 noodles. Cover noodles with 1/3 of ricotta cheese mixture, 1 cup of mozzarella and 1 cup sauce. Repeat layers two more times. Add last 3 noodles. Top lasagna with remaining sauce and with remaining mozzarella cheese. Sprinkle Parmesan over mozzarella. Cover and bake 45 to 50 minutes or until noodles are tender. Uncover and bake an additional 5 minutes to melt cheese.

I tried this recipe last night, as I was pressed for time and wanted something cheesy. This recipe was super easy (as compared to our family lasagna recipe). It was the perfect amount, not massive, but we had plenty of leftovers (over half the pan) after 4 adults indulged. We tried to serve the lasagna right when it came out of the oven... not a good idea. I would try to wait about 10-15 min before cutting and serving. Also, it didn't appear that I had enough sauce at first, so I added about another 1/2 jar of pasta sauce.... It ended up boiling over in the oven, so next time I will stick with the recommended sauce amount. I also added more spices to the sauce, including fresh garlic and graded onion just to satisfy family taste.

I also mix 1/2 lean hamburger to sausage when I fry it up and divide it and send 1/2 to my Mom and Dad to enjoy!

The only thing I added to the recipe was a tiny pinch of sugar to cut the acidic taste of the tomato sauce. Otherwise I used a Marinara style sauce with the recipe and it was truly delicious. The Italian sausage is the key..........don't substitute ground beef for this as I sadly used to do. Quick, easy recipe with tons of compliments!
